16. El Monte Guacamole

If you consider yourself a guacamole connaisseur then you’ve got to check out El Monte. The owner of the Rio Grande has opened a new Latin inspired restaurant at the southwest corner of Prospect and College, (tucked behind Harbor Freight Tools).  Make no mistake, this is not the Rio. El Monte has a more modern, upscale lounge feel but of couse we’re in Fort Collins so you’ll feel perfectly comfortable in casual dress.  Although I haven’t yet had dinner here, I keep coming back to their bar for a happy hour snack consisting of their incredible Guacamole ($6 during happy hour) and their Chicken Mole Tamale Boards ($4.50 during happy hour).  Pair that with a beer or one of their unique cocktails and you’ll be in Latin-fusion heaven.  You can even build your own guacamole with some unique ingredients like mangos, strawberries, goat cheese, chives and many others.  Or, just order the Exotic Guac which has all those ingredients plus habanero. Trust me it will be your new standard by which all other guac is judged. If you’re like me, you’ll also be insprired to pick up some new ingredients next time you’re making the stuff at home. 

El Monte is open every day from 11am-11pm.  Happy hour is from 3-6 and again from 9-11.
